Moist and Succulent Spatchcock Chicken

 3 lbs split back chicken
 1 tbsp heavenly herbs
 salt and pepper
 Olive Oil

This is a really easy chicken dish to make .. great if your in a hurry too.

split back chicken is cut through the underbelly of the bird. Make sure that you trim the fat and skin away that hangs loose, then placing on roasting tin you need to flatten the chicken with the palm of your hand forcing the bird to be splayed out and and as near to the roasting tin surface as possible.

Once you've done that, pour olive oil over the bird and then use a pastry brush to ensure that every part of the bird and inside folds and joints is coasted.

Then season well with salt and pepper and then sprinkle liberally with Heavenly Herbs by SpicewayUK.

And that's it.

Now place in the oven on 190 degrees and cook until golden brown.

I like to portion the chicken and cut the breast in two, placing all the portions on a platter so that everyone can help themselves.
